Here’s a Perch Roll Up recipe that some have been asking for.
Thawed Perch Fillets
1 bottle of Roasted Garlic Teriyaki Marinade & Sauce. Made by Kikkoman in the oriental food
section at Giant Eagle.
Good quality Smoked Bacon. 1/2 piece for each Perch Fillet.
One box of Tooth Picks.
Marinade your Perch for at least a few hours in above marinade.
Cut full Bacon strips in half. Then cook them half way in a microwave. They must remain
pliable.
Lay Perch fillet flat, place bacon on top and roll them up. Tooth Pick together with two t/picks.
Place on a Medium heat Grill. Don't leave them alone to long. Turn frequently.
The Perch will start to break apart and be bright white inside when done.
Walleye Chowder
8 slices bacon, chopped
4 tablespoons unsalted butter
2 small onion, chopped fine
4 teaspoons all purpose flour
2 carrot, chopped fine
1 teaspoon paprika
2 celery rib chopped fine
16 oz. bottled clam juice
2 cups water
1 cup heavy cream
1 pound potatoes
1 1/2 lb. raw walleye filets cut into 1 inch pieces
4 tablespoons minced fresh parsley
Salt & pepper to taste
In heavy saucepan, cook bacon over moderate heat, stirring until crisp and transfer to paper towels to drain.
Pour off fat and in pan, cook onion, carrot and celery in butter over moderately low heat, stirring occasionally
until softened.
Sprinkle flour over mixture and cook, stirring, 3 minutes. Stir in paprika and cook, stirring 30 seconds. Add
clam juice, water and cream and bring to a boil, stirring occasionally.
while mixture is coming to a boil, peel potato and cut into 3/8" diced pieces. Add potato to mixture and simmer
chowder, uncovered for 12 minutes or until potatoes are cooked. Stir in fish and simmer until just cooked
through, about 5 minutes. Stir in parsley, bacon and salt and pepper to taste.
Yields 4 servings
Beer Batter Perch:
6 ounces beer
1 cup flour
2 tsp salt
1 tsp garlic powder
2 T paprika
Pour beer in bowl - sift ½ cup flour, salt, paprika – whip with wire whisk.
Combine and mix ½ cup flour and garlic powder. Dredge fish in flour mix and
Dip in beer batter and deep fry.
Tips, Beer batter should be much thinner then pancake batter and I like to cook hot and fast turning after
approximately 1.5 minutes. Remove when golden brown.
